  • Raw milk doesn't go sour like store-bought milk, which is pasteurized. I personally think the taste starts to deteriorate after about three days ... it starts to taste like store-bought milk, which is always at least a few days old. The older it gets, the less suitable it is for making some cheeses because the acid level goes up. When making fresh cheese, we try to use the milk within 3-4 days; for aged cheeses, we try to use milk that is no more than 2-3 days old, but fresher is always better unless you're making the alpine cheeses, which are not as picky about milk that is a few days old. When we only had one milker, I would sometimes make chevre with milk that was 1-5 days old because that's what I had to do. At the time I had no idea why my cheese was sometimes better than others, but now I'm pretty sure that the age of the milk played a part. I also was not great about hygiene in the beginning, so I'm sure that didn't help. So, the bottom line is that no one can really answer that question with one single number of days.

  • I milk into a food grade commerical kitchen quality that hold 1 qt.   From there, I strain the milk into 1 pint or 1 quart jars (pre-chilled in freezer to help milk cool faster) depending on milk quantity.   Jars are great as glass can be sterialized in advance, and is fridge and freezer safe.  If you freeze milk, leave 1" headspace in qt jars, and 1  1/2" headspace  in 2 qt jars.  I use the canning lids provided.
