I'm wondering how long cajeta will last in the refrigerator? I'd like to give some as a gift, but I want to make sure it will last a while, and be able to tell the recipient how long that might be. Thanks! :)

Thanks for the info, Deborah. I've used your recipe twice now, with awesome results. Last night I brought it to a gathering and served it with vanilla ice cream. Everyone loved it! Thanks for sharing all that you do. If you were the stingy type with what you've learned, there is so much I wouldn't know right now. Hugs! :)
I've had it in there for at least a couple months and didn't notice a change in flavor. It has an incredibly high sugar content, which I suppose preserves it. I have also frozen it when I made a lot one year, and then I pulled it out one pint at a time as we used it up.
