I haven't come up with a long term answer to this. Are my goats just more wasteful than they should be? They only eat the alfalfa leaves and I'm left with tons of stems. I think my compost pile will soon be bigger than the house:)

You are probably feeding them too much at one time. Try giving them a smaller amount and feeding more often, and they'll be less wasteful. I went to a conference once with a woman who had a dairy with several hundred goats, and she said they fed small amounts of hay six times a day. Of course, she had employees, so do what you can! We usually feed three or four times a day in winter. In the summer, they're on pasture all day, so they get alfalfa only at night and first thing in the morning.
Our little herd leaves majority of the stems too,... I recycle them as bedding (just throw the stems in their sleeping area) - which all eventually ends up in the compost anyways in the end.
