Oh my goodness, I made a batch of cajeta (goat milk caramel sauce) today and it is amazing! It's so complex, creamy and not overly sweet. It certainly wasn't hard to do and it only needs a few ingredients. Though it did take a couple of hours and needed some minding, I highly recommend it. A jar of it would make a great holiday gift. I used the recipe from seriouseats.com.

Thanks for sharing that blog, Deborah! I'm a Plain Jane coffee drinker, but I also used to love those chemical "creamers." Maybe I'll give a thinner version a try!
